The dairy supply chain

Whole milk, skimmed milk and whey powders are some of the basic ingredients for our cream fillings. The milk we use for the production is of alpine origin and comes from animals fed exclusively with NON-GMO feed.

Every step of the milk’s journey, from collection to processing, is handled with precision and respect to preserve its natural goodness.

First South Tyrolean production plant of powdered milk

Together with Brimi, one of Italy’s leading dairy producers, we’ve established Dolomites Milk in Vandoies/Vintl. It’s South Tyrol’s first dairy plant which uses the drying process to obtain powdered milk. It has been operational since November 2019 and transforms whey, skimmed milk, and whole milk sourced from the Alpine region into ingredients for our products. Our milk meets the highest standards and is both Kosher and Halal certified, ensuring it’s suitable for diverse communities and aligned with our values of fairness and inclusivity.

Supply chain

Our partnership with the Brimi dairy cooperative is built on shared values and smart collaboration. By working together, we create synergies that strengthen our supply chain and bring us closer to our goal of a more transparent and responsible production model. We rely entirely on milk from the Alpine region, supporting local dairy farmers and promoting regional development. At the same time, we give new life to a valuable resource: the whey left over from cheese production by South Tyrolean companies. At our plant, it’s transformed into whey powder—an essential ingredient in our recipes—through a process that’s both efficient and meaningful.

Transport and logistics

The choice of Vandoies/Vintl as the home of Dolomites Milk was not a casual one. Situated between our production sites in Auna di Sotto and Heinfels, and just a few kilometers from our partner Brimi, this location allows us to minimize transport distances and streamline our operations. This isn’t just a logistical advantage—it’s a conscious decision that reflects our ongoing commitment to reducing CO₂ emissions and building a more efficient, responsible supply chain.

Animal Welfare

In South Tyrol, dairy farmers are part of the South Tyrol Animal Welfare Project—a region-wide initiative that puts animal health and wellbeing at the heart of dairy farming. Led by the Working Group for Farm Animal Science at the University of Bolzano (UNIBZ) and the South Tyrolean Dairy Association, the program monitors key indicators such as water access, resting areas, body condition, hoof health, and birth rates. Every aspect is evaluated and improved through targeted training, ensuring that care is consistent and meaningful across all 5,000 family-run farms in the region. With an average of 15 cows and 8 calves per farm, this is a deeply personal commitment—one that reflects the respect, attention, and integrity that define our approach to sourcing.
