At Loacker, 100% of the milk and dairy derivatives used in our cream fillings—including whole milk, skimmed milk, and whey powder—are exclusively sourced from the Alpine region. All dairy cows in our supply chain are fed exclusively with guaranteed NON-GMO feed.  

Every step of the milk’s journey, from collection at mountain family farms to gentle processing, is handled with precision, complete traceability, and respect for nature to preserve its natural taste and nutritional integrity.

To ensure our specialties are accessible to diverse communities worldwide, our entire milk supply chain is both Kosher and Halal certified, reflecting our core brand values of fairness, respect, and inclusivity.

Upcycling whey for a circular economy

We give new life to a valuable byproduct: fresh whey left over from cheese production by South Tyrolean dairy companies. At Dolomites Milk, this whey is transformed into fine whey powder—an essential ingredient that gives our cream fillings their signature smoothness.

Co-led by the Working Group for Farm Animal Science at the Free University of Bozen-Bolzano (UNIBZ) and the South Tyrolean Dairy Association, the program systematically monitors and improves key animal welfare indicators: continuous access to fresh water and clean resting areas; body condition scoring, hoof health, and natural mobility; birth rate monitoring and specialized training programs for farmers. 

This structured care is implemented across all 5,000 family-run farms in the region. With an average herd size of 15 cows and 8 calves per farm, dairy farming here remains a deeply personal commitment built on daily attention, dignity, and respect.
